Crazy Huge Muffin Baking Day.....100+

I got it in my head that I wanted to bake 100 muffins.  Why?  So I could feed them to my hungry family plus the extra crew that's around for cranberry harvest.  Emily was standing idle at the moment I had my muffin baking epiphany so I grabbed her and put her to work mixing and filling and baking.  Of course, I was instrumental in the process.  I didn't make her do all the work.

We had fun over filling muffin cups, balancing hot muffin pans on surfaces not meant for hot muffin pans, and creating a huge pile of dishes for Amber to wash.  It was a good day.  And in the end (which is a different end than in the video) we counted 105 muffins.  

Three of these recipes are old standbys.  The recipes are already on the blog.  Only one is new(er).

Power Muffins was the newbie recipe.  Both times I made them I had to make substitutions for some of the Greek yogurt.  I used plain Greek + honey, then I used plain Greek + honey + sour cream + vanilla yogurt.  Both batches turned out great so it seems to be a forgiving recipe.  No fussy cooking for this mama.

Hi to the baking crew!
I have some last from the garden zuchinni and I just happen to have dark chocolate chips in the cupboard!
Today I will try making your muffins, using my own mix of gluten-free flour.
Thanks and keep up the great work, Jennifer....your videos are always fun and I learn something each time I see one.

Hi, I stumbled across your you tube channel, that led me to your blog. Thanks for sharing your zucchini chocolate chip muffins recipe. I've been making a lot of muffins lately as they don't use as much energy nor does the baking heat up the house as much as would making a traditional tea loaf, such as banana bread. We are currently eating down the pantry and frozen stockpiles, using up bits of this n that in the process as the Summer months are typically my low spend grocery months. I was hit with some unexpected home repairs this Spring, luckily half should be reimbursed back to me, and my cushion is dried up. I am aiming to not make the same flavors time after time, so mixing it up is welcomed. Turning to some lurking, frozen shreds of Zucchini this morning and emptying an open bag of chocolate chips (used regular as that's what I had), I made a double batch of your muffins, which look and smell very good. You are so sweet.  I think I just read a comment from you over on YouTube.  I actually have some zucchini waiting to be made into muffins right now.....and a little girl begging for me to make them.
